「ạ」carries the politeness

Vietnamese sets politeness with a word at the end of the sentence, while Japanese switches into a whole separate keigo form - so the same thank-you is rebuilt, not word-swapped.

Vietnamese asks with a question word inside the sentence and Japanese with a か ending - the same question is reassembled in the other order.

Does it keep the polite ạ or dạ and the keigo on either side?

The engine is trained on spoken Vietnamese and Japanese, so a speaker who uses ạ or dạ usually gets a matching polite register, and service keigo stays polite. If a line comes out more casual than you meant, re-speak it slowly and check the transcript.

Can a Vietnamese traveler use it at a hotel in Japan?

Yes - check-in, breakfast times and shop exchanges are typical scenes. Say a line in Vietnamese and the staff hears it in Japanese; their reply shows under it in Vietnamese, ready to show on the screen.
